This is a revised, more contemporary, version of one of the original sponge cakes in the earlier book.
I am still very fond of it and have continued to make it regularly over the years. Now, though, since the advent of mascarpone, the icing is a great improvement.

Hi Can you freeze Delia's Coffee and Walnut cake?
Answered by Lindsey: Hello Adrian, This cake can be frozen with the icing. However! If making them for a really special occasion, I would choose to freeze the sponges and ice the cake after defrosting. I would freeze leftover slices of freshly made and filled coffee and walnut cake. how do you convert the recipe and cooking time for the coffee and walnut sponge cake from an 18cm round tin to a 20cm round tin?
Answered by Lindsey: Hello, You’ll need to do 1 ½ times the recipe for a 20cm sponge tins. It will still need about 30 minutes in the oven. Just check they spring back. Kind regards Lindsey
For the coffee and walnut sponge cake, I can't get a hold of any instant espresso. What could I use as an alternative?
Answered by Lindsey: Hello, You can use granulated instant coffee dissolved in a minimal amount of freshly boiled water. You could heat a cup with boiling water, discard the water then put a heaped tablespoon of coffee granules in the cup, quickly followed by a tablespoon of boiling water and whisk with a mini whisk (or fork) until dissolved (or you could use a microwave).
