If you've been meaning to make a Christmas cake but haven't got round to it, fear not – this one can be made at the last minute.
In fact you could bake it on Christmas morning and it would be ready for tea in the afternoon. If possible, you need three days to pre-soak some of the ingredients in sherry, but if you have only three hours, that will do. There is also more good news: it's an all-in-one cake, which means everything can be thrown in the bowl together, mixed and then baked with hardly any effort at all. Results? One of the nicest Christmas cakes ever.

Hi, I'm making the Christmas sherry cake but want to make a 6" cake instead of the 8" as per the recipe. How do I scale down the ingredients please. Thank you.
Answered by Lindsey: Hello, I think that half of the Christmas Sherry Mincemeat Cake recipe will work in a 6 inch tin. You could use 2 medium eggs or if you’re using large ones beat them and use ¾ of the mixture. I would take a peek after an hour to see how it’s doing. Remember to reduce the temperature by 20 degrees if you are using a fan setting. Best wishes Lindsey
