The wonderful thing about breadmakers is they cut all the tedious bits out of making an enriched dough, but all homemade hot cross buns are in a different league from anything you can buy.

Hot cross buns not rising - I followed the bread machine recipe to the letter, but my hot cross buns aren't rising. The yeast is fine - a loaf of bread I made with it is perfect - but after 30 minutes, there was no rise at all, and 30 minutes does seem a little short, so I waited longer. After an hour, still no noticeable rise. It's been two hours now, and still nothing. I've heard that sugar and fruit retards yeast, so are you sure the ratios in this recipe are correct? I think the amount of sugar and fruit has simply killed the yeast.
Answered by Lindsey: Hello, I made the beadmaker hot cross buns this year but with extra spice and they rose really well, but they did take longer. Probably about an hour in all. I’ll look into making a timing adjustment in the recipe. Thank you for letting us know. Kind regards Lindsey
You will also need a baking sheet measuring 16 x 12 inches (40 x 30 cm), greased, and a large polythene bag, lightly oiled.
Pre-heat the oven to gas mark 7, 425°F (220°C)
