What is Simnel cake?
A rich fruit cake which includes lumps of marzipan stirred into the mixture that melts and combines with all the other flavours during cooking. It is then finished off with more marzipan. As it’s now popular at Easter, sugared primroses make a good decoration, see the Sugared Flowers recipe below.

Would Delia’s simnel cake recipe work ok if I swap the plain flour for GF plain flour?

I would like to make a 7" version of Delia's Simnel cake. What would the amount of ingredients be, and how long would it take to bake? Many thanks
Answered by Lindsey: Hello, I suggest ¾ of the recipe for a 7 inch tin. It’s not so easy to calculate ¾ of 3 large eggs but I for ¾ of the recipe I would use 150g of beaten egg. Same temperature – 150C or 130C if using a fan setting. I would check if it is cooked when it has had 1 hour 50 minutes. Wrapped in parchment and foil it will keep for 3 weeks in an airtight tin. I am baking a Simnel cake for the first time and noticed that some recipes (not Delia's) have you brush the top marzipan with raw egg and then torch the marzipan or place under a broiler. Is this safe as I have always thought that raw egg should not be consumed. I don't want to endanger the health of parishioners. Any suggestions on crimping the marzipan edge? Should this be done with thumb and finger or is a tool a better choice. Thank you for you assistance
Answered by Lindsey: Hello, British Lion hens’ eggs are safe to eat raw. However, it’s not needed for simnel cake. The marzipan will brown under the grill or with a blowtorch without the egg.
