The cheese in Goats' Cheese Soufflé

I refer to Delia's recipe for Twice Baked Goat Cheese Souffles - but I cannot find the Peppered Goats Cheese from the recipe - can you help please? Thank you

Hello,

Just use an ordinary goats’ cheese log. Something softish to semi-soft. If it has a rind, I would remove and discard it. Then just add some pepper to the mixture.
