There’s something about a classic sponge cake that never goes out of style, and this week’s cake has a bright, tropical twist with the addition of passion fruit.

The recipe is made using an 8-inch (20cm) tin, but you can make a smaller one using a 7-inch (18cm) tin using just two eggs and equal quantities of flour, sugar and butter.
