Most of us are feeling the pressure of the rising cost of living, especially when it comes to the weekly grocery shop.
With that in mind, we considered several factors while planning our menu for June: cost, ingredient availability, and keeping shopping lists as simple as possible. We’ve also included store-cupboard staples you may already have at home or can easily buy and use the rest for another meal.
And because many of us are choosing staycations again this year, this month’s menu brings a taste of Italy to your table — no travel required.
A classic Italian starter of bruschetta with tomato and basil. A substantial soup with pasta and beans. Maybe not for any very hot sunny days (wishful thinking!) but it works brilliantly as a main course. And the coffee granita is a cooling finally to our brief Italian tour. If you fancy a bit of baking this could be served with some homemade Almond Biscotti
