If you've never made a Christmas cake before, this one is dead easy, and you won't be disappointed.
These have a much thinner layer of marzipan and icing, and the flavour of the Irish whiskey in the icing, as well as the cake, is brilliant. The instructions here are for four small cakes or one large cake. If you want to keep the cake for any length of time, let the marzipan dry out (covered with a clean tea cloth) for a week before icing.

Hello Lindsey, I hope all is well? Making the Irish Whiskey Christmas Pudding as loved the one we were given. I was told to keep for two months before eating and just keep well wrapped and in an airtight container, no feeding....I will not be adding the icing as I love the cake plain. The recipe doesn't mention this and also doesn't mention anything about feeding the cake... 1. Is it best to store for a couple of months to mature before eating? 2. Is it fine not to feed for this period? Thank you, Yiannis
Answered by Lindsey: Hello Yiannis, We are all good thank you. This Irish Whiskey Christmas Cake can be fed if you like but it’s also very good without being fed. Rich fruit cakes keep well and become moister when left to mature but they are still good to eat a sooner. So really it’s down to personal preference. If you feed your cake it will be moister and have a prominent taste of the alcohol. If you eat the cake sooner than two months it will still be lovely Best wishes Lindsey
Re. Half quantities: Delia's Irish Whiskey Christmas Cake I don't want to stop using this recipe but it's too big for our Christmas now. Would you recommend attempting half quantities and if so what size tin? If I am going for half quantity would 3 medium eggs be half of 5 large? I see your answer to another community member about the classic cake in a 2lb loaf tin and I've considered that but worry it would dome too much. Thanks in advance
Answered by Lindsey: Hello, I think a 2 large egg recipe will work in a 6 inch round (or 5 inch square) or a 3 large egg recipe in a 7 inch round (or 6 inch square). Kind regards Lindsey
I love Delia's Irish Whiskey Christmas cake and have made it dozens of times for formal occasions like weddings. However, I always find that it is difficult to cut neat slices for serving - it tends to crumble. Any suggestions to make it firmer.
Answered by Lindsey: Hello, I would try baking it for longer, perhaps for an hour instead of 30 minutes when it is covered with the foil. Then I find it helps if the cake is kept in a cool place before cutting, as it tends to be firmer. Hot summer weddings when you need to cut lots of slices in haste can be the most challenging. I think the classic Christmas cake is often the preferred recipe for large events because it’s easier to cut small neat slices. Kind regards Lindsey
