This recipe from our Online Cookery School, is a revised, updated version of an original recipe of Delia's.
It's a lovely celebration cake, the sponges are infused with the coffee flavour to give it depth, and the addition of chopped walnuts adds a subtle crunch. Once they are baked and cooled, the filling and topping is a mixture of mascarpone flavoured with coffee, sugar and milk. No professional decorating skills are needed, just a simple swirl with a palette knife and a few walnut halves around the edges for a beautiful finish.
