Last-minute Christmas Mincemeat Cake

If you’re looking for an easy Christmas cake recipe that fits around a busy December, Delia’s Last-minute Christmas Mincemeat Cake is the perfect solution; delivering all the flavour of a traditional Christmas cake but without weeks of preparation.

This cake is made with a jar of luxury mincemeat, and the soaking (if you have the time), is reduced to just 4 hours. It’s a brilliant alternative to a heavy traditional Christmas fruit cake and a great choice if you need a quick cake but don't want to buy one.  It’s also a great way to use up leftover mincemeat after making mince pies to reduce food waste. The glaze of apricot jam and brandy is warmed while the cake is cooling, then brushed over the top - and that's all there is to it!
