Hello would the last minute Christmas cake be ok without mincemeat? and use Extra fruit ? Or ?
Answered by Lindsey: Hello, If your not using mincemeat, I’d make the classic cake instead. Even at this late stage with a couple of ‘feeds’ (and when feeding brush the cake all over with a pastry brush dipped in Brandy or Armagnac) it will still be good fro Christmas. Kind regards Lindsey
