When the sun’s out (or you just wish it was), nothing hits the spot quite like something cool, creamy, and refreshingly citrusy.

That’s where Delia’s Lemon and Lime Refrigerator Cake comes in. This chilled no-bake cake is perfect for the summer when the last thing you want to do is turn on the oven. Made with a base of crushed digestive biscuits mixed with Grape Nuts, then topped with a creamy citrus filling - the zing of fresh lemon and lime cuts through the richness beautifully, making it light and indulgent. 

The cake can be frozen for up to a month, and if you can't find Grape Nuts scroll to the bottom of the recipe where Lindsey has an alternative suggestion you can use to make the base.
