Dining in or out ‘at home’ for two!
This month, Lindsey has chosen a menu so that you can enjoy a special meal for two without leaving the house. Whether you're planning a romantic dinner or simply want to make the most of a sunny day or warm summer evening, this Italian-inspired al fresco menu is the perfect way to bring a taste of Italy to your own garden or balcony. This easy-to-prepare three-course menu is ideal for stress-free entertaining.
Dining 'at home' doesn't have to mean staying indoors, so set up an outdoor table, light a few candles, and enjoy!
Prepare the granita a day or two in advance and freeze. On the day, pop two glasses in the fridge, then whip the cream, cover and chill in the fridge a few hours ahead.
For your starter, you can slice and plate the tomatoes and mozzarella a few hours beforehand; cover, and leave in a cool, place out of the fridge. Make the herb dressing ahead of time using a pestle and mortar or a mini food chopper, then just slice the avocado and drizzle the dressing over the salad right before serving with some Focaccia or a good quality crusty bread.
For the main course, the Gorgonzola and crème fraîche can be blended in advance, and the pancetta and garlic can be cooked and ready for when the time is right to boil the pasta.
