Easter Simnel Cake is more than just a fruit cake, it has roots that stretch back to medieval times.
Originally associated with Mothering Sunday, over time, it has become more associated with Easter celebrations. This light cake is packed with dried fruits, citrus zest, and warming spices. What really sets it apart is the cubes of marzipan gently folded into the mixture, which melt as it's cooked. Once it's out of the oven and cooled, a final layer of marzipan covers the top which is lightly toasted to a golden brown. Decorate with sugared flowers to add a touch of spring.
