This recipe is from Delia's Vegetarian Collection.
Although I am not a vegetarian, I really love this alternative version to meat, with its diverse combination of dried pulses and fresh vegetables.
It’s also extremely popular with veggie customers in our restaurant at Norwich City Football Club.
Vegetarians may like to know there is a Parmesan 'style' cheese available from Bookham and Harrison Farms

Hi Lindsey, If I freeze Vegetarian Shepherds Pie, is it best to defrost and then cook for 40 min at 190 degrees or cook from frozen? If the latter is better, how long would it need in the oven … and presumably at the same temperature? Many thanks - my family loved it so I would like one on hand when my daughter visits from USA next month! Happy Easter to you and to all there. Jennifer
Answered by Lindsey: Hello Jennifer, You can freeze the pie once you have added the mashed potato but before cooking. Wrap the dish in freezer film and then a freezer bag and freeze for up to 3 months. Defrost overnight in the fridge before continuing with the recipe. Yes 190C (170 fan) for 40 minutes. A very Happy Easter to you too, Lindsey
Hello Lindsey. I want to make Delia's Vegetarian Shepherds Pie with Goat's Cheese Mash, but they are not keen on Goats cheese and I wondered if you could recommend a substitute - vegetarian or otherwise. Many thanks. Eileen
Answered by Lindsey: Hello Eileen, You can use any firm cheese such as Cheddar, Lancashire, Caerphilly or Feta. Best wishes Lindsey
