When we first put this on the menu at Delia's City Brasserie at the football club, it was one of the fastest-selling desserts ever.
Please don't worry about rolling it up – if it cracks, it's quite normal. It's lovely having the layers of meringue and filling providing a contrast to each other.

On 07 December I am having a "Girlie Soiree" and one of the desserts I intend to make is the Hazelnut & Chocolate Roulade, time is very much of the essence and I would like to make the dessert 2/3 weeks in advance and freeze it - is this dessert able to be frozen ? Thanks

Dear Lindsey, I am shortly making the Chocolte Hazelnut Meringue Roulade for an evening dinner. I am wondering how far in advance can I roll the meringue + cream up without it going soggy? It would help my planning a lot if I could do it in the morning, or at least lunchtime! Thank you.
Answered by Lindsey: Hello, We would roll this up to 4 hours ahead and keep covered in the refrigerator. When baked it should have a crispy top! Best wishes Lindsey
