Figs are at their best in autumn and, even if they're not squidgy enough to eat straight, they still respond beautifully to light poaching.
In this recipe they impart their flavour to mingle with a sweet Marsala wine. Serve them with the lightest mascarpone mousse and it's heaven on earth!

Hi, I want to make the recipe mascarpone mousse with figs in Marsala. I am having a problem getting the fromage frais, Waitrose sell the fat free one. Could I use Greek yoghurt or would you suggest something else. Thanks Deborah
Answered by Lindsey: Hello Deborah, 8% Fromage Frais is usually available in Waitrose – either Waitrose own brand or Rians La Faisselle brand (I’ve seen Rians on French Click as well). If you cannot get the 8% I sometimes use the fat-free fromage frais (which seems to be available just about everywhere) – For 200ml I would substitute with 150ml of the fat-free fromage frais combined with 50ml extra thick double cream or full-fat crème fraîche. Or yes you could use thick Greek yoghurt – I’d use Fage Total 5% Best wishes Lindsey
