This is quite definitely the best and, like the Christmas cake, has been made and loved by a cast of thousands over forty years.
If you’ve never made a Christmas pudding, please don’t be put off by the eight hours’ steaming – it isn’t any work, it just sits happily on its own getting the long slow cooking which is what gives it such wonderful flavour and character. If you can't get barley wine (pubs usually have it), use extra stout instead. The best way to use what's left over, if you don't want to drink it, is to add it to my Beef in Designer Beer recipe to give it a beautiful rich sauce. We have also included instructions to make it gluten-free, see the end of of the method.

Hello, I'm hoping to make Delia's Christmas Pudding and note that the recipe calls for shredded suet. Does it have to be beef suet or will vegetable suet work? I can't find beef suet in Ireland. I look forward to hearing back from you. Kind regards, Elaine.
Answered by Lindsey: Hello Elaine, You could use vegetable suet, or you can use grated butter if you prefer. In the same way as Delia prepares quick flaky pastry, it’s easier to grate it if it’s been frozen for 45 minutes first and use a little of the flour to keep the gratings separate. Best wishes Lindsey
Hello Lindsey. I've just found, lurking in the cupboard, a small Christmas pudding from last year!! As it's Stir Up Sunday today, I've already started my mix for this year, but wondered if the one I've found would be ok or should I not take a chance and just bin it? Thanks Eileen
Answered by Lindsey: Hello Eileen, Unwrap it and check that it has no obvious signs of deterioration or mould and if it still smells nice it will be fine to add some fresh parchment and foil and steam on Christmas day. Kind regards Lindsey
I would like to cook Delias Traditional Christmas Pudding in a slow cooker , please advise
Answered by Lindsey: Hello, We do not have a slow cooker but I would suggest 8 hours on high, with boiling water poured into the slow cooker so that it comes half way up the pudding basin. Then reheat in the same way for 2 1/4 hours. Kind regards Lindsey
You will also need a 2 pint (1.2 litre) pudding basin, lightly greased, baking parchment, foil and string, and a traditional or fan-type steamer
