Having not properly entertained since before the dreaded Covid, I am now going to try and produce a salmon en croute for 8 people. I have already cheated and purchased all butter puff pastry sheets. However, to minimise the anticipated stress and panic on the evening, how far in advance can I prepare and pop it in the fridge? As well as the salmon fillet I will be putting in spinach and cream cheese stuffing. It would be great to assemble everything an put it in the fridge well in advance but will it all go soggy?
Answered by Lindsey: Hello, You can assemble Delia’s version 24 hours in advance (without the glaze) and keep well covered in the fridge. I haven’t tried this with a spinach and cream cheese stuffing – that is wetter so maybe reduce the 24 hours to 6 hours ahead for your version. Kind regards Lindsey
You will need a large frying pan and a Delia Online Baking Sheet (or similar), with a liner or lightly greased.
When you are ready to bake them, pre-heat the oven to 220°C, Gas Mark 7.
