This recipe is from The Delia Collection: Baking.
There are several different versions of this Welsh 'speckled bread'.
Many of them don't contain yeast; but, for me, this version is the nicest and if there's any left over it's delicious toasted. In my Welsh childhood, I remember it made with yeast, very spicy and spread with lots of butter. Please note that easy-blend yeast is not suitable for this recipe.

I can no longer find non easy bake yeast locally, can I use any other yeast or how can I adapt the Bara brith recipe as I really like it Thanks
Answered by Lindsey: Hello, You can use 25g of fresh yeast instead. Just crumble into the warm milk and proceed as the recipe. Best wishes Lindsey
