Becky Excell: Pea and Mint Cottage Cheese Protein Pancakes

If my buckwheat pancakes were created for pairing with sweetness, these protein- and fibre-packed (yet still light and fluffy) pancakes are for the total opposite craving: savoury pancake stack glory.

With a vibrant green, herby hue thanks to the combo of peas, mint, spring onion, cottage cheese and blitzed oats, they’re a great nutrient-dense, flavourful base for anything and everything from poached eggs to smashed avocado or even salmon and a spread of light cream cheese. And no, they don’t taste like grass or anything like that, they just taste like a fantastically flavourful, fluffy stack of awesomeness!

Method

In a blender or food processor, blitz the oats to a fine oatmeal.

Add the cottage cheese, eggs, bicarb, lemon juice, peas, spring onion greens, mint, salt, pepper and lemon zest, and blitz for 30–45 seconds until mostly smooth. Leave to rest for 5–10 minutes, to thicken.

Lightly oil a large non-stick frying pan (skillet) and place over a medium heat. Spoon 3 tablespoons of batter per pancake, spooning straight into the middle of the previous dollop each time. Cook for 2–3 minutes until the edges are set and the underside is golden, then flip and cook for 1 minute more. Repeat until all of the batter has been used. Serve warm.

These can be stored in the fridge for up to 3 days in airtight containers. Reheat on low in the toaster.

Dairy-free Use thick dairy-free yoghurt instead of cottage cheese.

Lactose-free Use lactose-free cottage cheese, or lactose-free Greek yoghurt if unavailable.

Veggie

Vegan See dairy-free advice; replace eggs with 2 tbsp milled flaxseed mixed with 6 tbsp water, rested for 10 minutes.

FREEZING: Up to 2 months in airtight containers (layer with non-stick baking parchment). Defrost overnight in the fridge; reheat in the toaster.
