I had sent you a comment rather than a question regarding rice.
I recently made Delia's Moussaka and it suggested using a Pilau rice dish to go with it, and using Arborio rice.
So I looked in my wife's 1992 Delia's Cook Book which our son had purchased as a Birthday present for my wife in 1992 ! (which had many reprints at that time) The article about the many types of rice was most interesting - especially the best way that Delia suggested to cook it, by using olive oil and cook the spices first, then add the rice and ensure it gets fully oiled. Then boiling water and close the lid for 15 minutes. My wife had never cooked rice this way before, so it occurs to me that Delia & yourself should consider an article on rice, as I am sure very few home cooks may be aware of it.
