I am going to make Lemon and Lime Refrigerator Cake but I only have gelatine leaves ( I am not making it vegetarian). Please can you tell me how many to use and how to incorporate the soaked leaves into the egg yolk/ sugar/juice and zest mixture.

You need the amount required to set 1 pint so that is probably 4 leaves!
I’d soak them in cold water and use the lemon juice from the recipe heated to melt the gelatine.
Then whisk the gelatine mix into the ingredients after you start whisking them over the heat.
