Hello Lindsey as I'm on my own now and getting back the interest in cooking, I'm having to change my approach to menu planning for one.
Would the sauce for the egg and lentil curry freeze if I made a batch, ie doubled the recipe.

Lovely to hear from you again. We have been thinking of you and hope you are okay.
I have made this wonderful sauce recently and I’m sure it will freeze well for up to 6 months. I’d leave out the lime juice.
Defrost overnight in the fridge then reheat the lentil sauce in a saucepan then add the lime juice and eggs and serve over rice.
