Dundee Cake for Christmas

Would it be possible to use the Dundee cake recipe for a Christmas cake and put marzipan and icing on top? I’m trying to find a light alcohol free cake that I can ice as a traditional Christmas cake. If so how far in advance could I make it?

Hello,

Yes, you can decorate a Dundee cake but it does not keep like a rich fruitcake. It will keep for a week or so wrapped and stored in an airtight tin, but if you want to keep it longer, I would freeze it (well wrapped and not decorated), preferably on the day that it’s baked.
