Christmas Cake without Alcohol

Hi Lindsey

For medical reasons, my husband is now unable to have alcohol. I have always made your Classic Christmas Cake but am in need of an alternative this year. I still intend to marzipan and ice the cake, could you please recommend a recipe that will still taste as rich and delicious? He loves cherries and I have bought some Morello cherries hoping I can use these!

How about this one and swap the glace cherries for your Morello cherries.

Light Christmas Cake

Or you can make the Classic without the alcohol and swap out any of the dried fruit for your cherries. Use grape, prune or apple juice to soak the fruit but don’t ‘feed’ it.

We love the classic cake so much I'll do that again but soaking with fruit juice instead.
As it won't be fed, how close to Christmas should I make it?
