This traditional Madeira cake is light and buttery with a subtle lemon flavour. It's the ideal Afternoon tea cake, or for a more authentic touch try it with a glass of chilled Madeira wine, just as it was intended.
For the best texture, keep the sieve high while sifting the flour to incorporate plenty of air. Then use an electric hand whisk to make it easy to add the remaining ingredients. Once combined, pile the mixture into a loaf tin and bake for about 1 hour or until it springs back lightly to the touch.
