Coffee and Cardamom Cake with Pistachios

Our Cake of the Week is back, and we’re kicking things off in 2026 with a cake that has two flavours that might not sound as if they should go together.

 The rich depth of coffee pairs beautifully with cardamom - a spice you'd normally expect to use if you were making a curry, and in Delia’s own words, the combination is simply 'sublime'. The cake is finished with pistachios scattered generously over the top, adding colour and crunch and you can watch how to roast nuts in our Cookery School video, you'll find on the recipe page. Taken from the book Delia’s Cakes, this recipe was tested successfully using gluten-free ingredients.
