This menu is an admiring nod to Delia’s 1976 public information ‘Save It’ film when her economical “energy sense is common sense” menu of leek and potato soup, spiced chicken, oven-baked rice and bread and butter pudding were all cooked together in the same oven.
Fifty years on we are celebrating this anniversary with a menu that follows Delia’s sound advice. The recipes for the starter and main course serve six and the pear recipe which serves eight can easily be adjusted down to serve the same, or it keeps well for five days in the fridge if you want to enjoy the leftovers!
The pears are usually baked in an oven set at ten degrees lower, so depending on their firmness they may be ready after two hours, just check them with a skewer to see if they are tender. The Marsala wine can be swapped for strong dry cider or red wine if you prefer to ring the changes or reduce the cost.
