This easy muffin recipe uses dried apricots for ease and year-round availability, but during the summer months, they're even better made with fresh, juicy apricots. The buttery crumble topping adds extra texture, flavour and a lovely crunch, balancing perfectly with the soft, fluffy texture and sweet-tart apricot filling.
