Fresh Lime and Coconut Cake

Delia's Fresh Lime and Coconut Cake combines the zesty citrus of fresh limes with the tropical sweetness of coconut. 

The two sponge cakes have desiccated coconut stirred in for texture, and freshly grated lime zest to give a citrus boost. Once baked, the cooled cakes are sandwiched together with half of a mixture of dried coconut milk, fondant icing sugar, and lime juice and zest giving it a moist, tangy finish. The other half is spread over the top to give a glossy finish.

It’s a straightforward recipe, perfect for anyone who wants to create a tropical twist on a classic sponge cake.
