We warmly welcome Ursula Ferrigno, acclaimed food writer and chef who embodies the Italian passion for good food made from the freshest natural ingredients. Ursula has joined together with Italy's staple ingredient, Grana Padano, to share her traditional family recipes with us.
Over the decades, I have been incredibly privileged to teach in some of Italy’s most breath-taking regions — Tuscany, Umbria, Veneto, and Puglia. These experiences have been more than just about cooking; they have been immersive journeys into the heart of Italian culinary tradition. Part of the week includes excursions to bustling local markets, intimate dining experiences in family-run restaurants, and behind-the-scenes access to private kitchens where age-old recipes are passed down through generations. One thing I can safely and happily say is that native Italian cooks understand the true secret of success in the kitchen—and that secret is cooking with Grana Padano. This remarkable cheese is not just a staple in Italian cuisine; it is a Protected Designation of Origin (PDO) product, meaning it is crafted using time-honoured methods and sourced from specific regions, ensuring the highest quality and authenticity.
Beyond its rich, nutty flavour and versatility in cooking, Grana Padano is also a powerhouse of nutrition. Naturally lactose-free, it is an excellent option for those with dietary sensitivities. It is packed with high-quality protein, essential for muscle health, and is a fantastic source of calcium, crucial for strong bones and teeth. Additionally, it provides essential vitamins that play a role in energy metabolism and overall well-being. While it’s just one part of a balanced diet, it’s no wonder Italians enjoy it as a tasty addition to their everyday cooking.
Despite its long maturation process and high nutritional value, it remains a budget-friendly option, making it an excellent choice for home cooks and professionals alike.
Whether grated over pasta, shaved into salads, or enjoyed on its own with a drizzle of honey, Grana Padano is a true testament to the beauty of Italian cuisine—simple, nutritious, and utterly delicious.
Try my two new recipes: Torta Di Grana Padano - a quick and easy to make scrumptious cheesy bread perfect for Easter family gatherings and Polpette of Aubergine & Grana Padano with Roast Cherry Tomatoes - a totally memorable dish enjoyed with my father on a business lunch in Italy whose recipe was a closely guarded secret.
Hoping you love these dishes as much as I do.
