These little crumbly tarts are made by combining the butter, icing sugar and vanilla extract until soft and creamy, then adding the sieved flour and cornflour.
The mixture is then divided into prepared paper cases and making a little well using the back of a spoon, they are baked and cooled, then filled with a generous dollop of jam and a sifting of icing sugar. You can watch how this recipe is made in Delia's Cookery School video.
