We can sometimes forget traditional cakes, and this recipe almost missed out being added to the book Delia's Cakes.
Rock Cakes are easy to make, requiring only a few pretty basic ingredients. The dry ingredients are mixed together first, then the whisked egg binds it all together, and being called rock cakes means you don't have to worry about shaping them before they go into the oven, in fact - the more haphazard they look the better!
