PEAR AND ALMOND CAKE WITH STREUSEL TOPPING

Our cake this week is a great autumn cake, and it ticks so many boxes.

Not only can you serve it for afternoon tea, Delia also recommends serving with Jersey cream as a dessert. It also has the added advantage of being tested successfully using gluten free ingredients. Although it's best eaten on the day it's baked it can be frozen for three months - and you can find out how to do that in the Ask Lindsey section at the bottom of the recipe.
