In this recipe, asparagus is encased in very thin, crisp parcels of puff pastry with melted cheese.
A lovely main course for a summer's lunch or supper party or you could make 8 small ones for a first course. Vegetarians may like to know there is a Parmesan 'style' cheese available from Bookham and Harrison Farms Ltd.

Can you freeze the Asparagus and Gruyère Feuilletés? If so, is it best to freeze them cooked or uncooked (or partially cooked!)? Thanks.
Answered by Lindsey: Hello, The feuilletés recipe is not suitable for freezing. But we do make, bake and freeze this tart for up to 6 months… Kind regards Lindsey
Hello Lindsey, In this weeks newsletter about asparagus there is the recipe for asparagus with gruyere in a feuillete. One of the ingredients is to buy ready rolled pastry. In the recipe it says to actually roll the pastry before cutting it. Is this correct as I do not usually roll ready rolled pastry - if you get my drift?! Thank you. Rosie
Answered by Lindsey: Hello Rosie, The shape of ready rolled pastry can vary depending on the supplier. As long as you have 375g or thereabouts you just need to divide that amount into two pieces then yes you do roll each piece thinner into a 30cm square. If you can’t get ready rolled puff pastry you can use the same weight of block puff pastry or homemade puff pastry or even quick flaky pastry. Kind regards Lindsey
