This recipe is taken from Delia Smith’s Christmas.
This is excellent served as a light lunch with lovely crisp gherkins and lightly toasted bread.
It also goes a long way at a help-yourself buffet party, or as a first course with some Cranberry and Onion Confit – but don't be tempted to serve too big portions as a first course because it is very rich.

Answered by Lindsey: Hello Jan, Freshly made, chilled pheasant terrine can be frozen whole or cut into smaller pieces or sliced. Make sure it is very well wrapped and store in the freezer for up to one month. Defrost overnight in the fridge and remove from the fridge about 1 ½ hours before serving to take off the chill.
