I have included this because I still get letters from people saying they can't make muffins.
My message to them is don't try too hard – undermixing is the golden rule and, once mastered, the American muffin mix makes the lightest cakes in the world. In the summer, you could always substitute the apples for 12 oz (350 g) of fresh apricots, stoned and chopped, or, in the autumn, 12 oz (350 g) of plums, stoned and chopped. In both cases, though, weigh after stoning.

Hello Lindsay, I hope you can help please? I love the look and sound of Delia’s spiced apple streusel muffin cake with pecan topping. Is it possible to make this cake using gluten free flour instead and would I need to add or remove anything else to help make a similar cake to Delia’s but gluten free?
Answered by Lindsey: Hello, We tested all the cakes in Delia’s cake book swapping out the ingredients with their gluten free equivalents but without adjusting anything else. We found that 90% of the recipes were successful. Muffins cake recipes all worked really well. Kind regards Lindsey
