This recipe is from Delia's Happy Christmas.
Cooking a turkey for the first time at Christmas, when in-laws and other guests are probably milling around, can be quite a traumatic experience.
I think the secret of success is to give the turkey a good blast of heat to begin with, and once you've got it going (ie, the heat has penetrated right through) you can then turn the oven down and let the turkey cook through more gently. It is also a good precaution to calculate your starting time so that the bird should complete cooking at least 30 minutes before you plan to sit down to eat. That way it has a chance to 'relax' so that the flesh can re-absorb the juices that have bubbled to the surface; it also allows sufficient time to give the turkey another 10 minutes or so cooking time if it needs it. If you like your stuffing firm, so that it cuts in slices, add a beaten egg to bind it. If, like me, you prefer it crumbly, leave the egg out.

Hope it’s ok to ask a Christmas question in October! Would it be ok to stuff my turkey in the evening on Christmas Eve? I make Delia’s recipe pork, sage and onion stuffing and stuff the turkey the way Delia describes in her Christmas book. I’d rather do it Christmas Eve if it’s possible but wonder how long I’d give a 6.5kg turkey plus it’s nearly 1kg stuffing to come up to room temperature before cooking? Thanks a million, Sara
Answered by Lindsey: Hello Sara, As you know, Delia takes the turkey and stuffing out of the fridge last thing on Christmas Eve so if you want do the same and go one step further and stuff the bird you can. Leave it covered in a cool place until it goes in the oven. Kind regards Lindsey
Have you got AGA alternatives for which oven to use? For example: when roasting turkey I am assuming a blast of heat in Roasting Oven, then cook slower in Baking Oven, followed by back to Roasting Oven?

Hi Lindsey, my small turkey weighs 3.3kg. Please can you tell me how long to cook it by Delia's method. The instructions on the bag say gas 3, 170C for 2 hours 13 mins. Thank you and Happy Christmas
