For the roast goose with apple and force meat stuffing serves with prunes and armagnac, is the weight guidance for cooking times referring to the goose alone or with the stuffing? Our goose will be 6.8kg plus stuffing. I can't seem to find guidance for cooking by weight as you would find for a stuffed turkey etc.
Answered by Lindsey: Hello, For a 6.8K goose plus stuffing, I would do the initial 30 minutes then 3¾ hours at 180C (160 in a fan oven). Check to see if the juices run clear 30 minutes before the end of the cooking time. Kind regards Lindsey
