For waist-watchers and the health conscious, the growing popularity of filo pastry is, I'm sure, warmly welcomed.
But I also suspect we could be in danger of overkill, so I like to use it only where it's really appropriate – like here, where a parcel of something really does seal in all those precious salmon juices, and when they mingle with the lime, ginger and coriander, the result is marvellous!

Re: Thai salmon filo parcels. Can they made ahead and stored in the fridge? Many thanks Stephen
Answered by Lindsey: Hello, Yes you can freeze the unbaked parcels. Open freeze then wrap individually and store in a ridged container for up to 3 months. Unwrap, put them on a tray or plate lined with baking parchment, cover and defrost overnight in the fridge. Bake as the recipe. Kind regards Lindsey
Pre-heat the oven to gas mark 5, 375°F (190°C).
