I've got a thing about fish cakes: if they appear on a restaurant menu I always order them - and I'm frequently trying to dream up new variations.
This one is a real winner. You can make it with any fish; it doesn't have to be salmon. Serve with Toasted Sweetcorn Salsa, which is a cross between a sauce and a salad, low in calories and absolutely delicious.

Hello Lynsey I am going to make Delia's Salmon Rosti. Can these be frozen and at what stage in the recipe should I freeze. Thank you
Answered by Lindsey: Hello, Yes these can be frozen. Once the cakes are shaped, open-freeze them until solid then store in polythene or a plastic container. Cook from frozen, allowing an extra 10 minutes cooking time for defrosting. Alternatively, allow to defrost in the fridge overnight before cooking. Best wishes, Lindsey
