Storing and Freezing Cakes and Biscuits

Brownies freeze beautifully, just wrap them tightly in cling film, pop them in a freezer bag, and they’ll taste as fresh as the day you baked them! The same goes for an unfilled sponge cake, which freezes wonderfully for up to a month (and often much longer). Scones and small cakes also hold up brilliantly in the freezer, making them perfect for baking ahead. You can even slice a sponge cake before freezing, wrapping each piece in cling film for easy single servings -  ideal if you live alone or just want a treat now and then.

Biscuits freeze well too, which is super handy since most one-egg recipes make more than you can enjoy in one go.

For cakes that are iced or filled with cream or mascarpone, refrigeration is best. A polythene cake box works perfectly for keeping them fresh, and if it comes with a lift-out tray (like the one in the video), it makes moving your cake in and out effortless. Traditional cake tins are also great for storage, and loaf cakes fit neatly into rectangular plastic boxes.
