Made with very special oranges from Seville in Spain, it can only be achieved when you make it at home. When you are making Traditional Seville Orange Marmalade, the rougher the skins the better, and Delia recommends hunting out larger Seville oranges if you can. They're in season in January so it's the perfect month to make your marmalade.
