Freezing Key Lime Pie

Hi Lindsey

Can I freeze the Key Lime Pie after making/baking it? We are entertaining on the 10th and I'd like to make the pie ahead of time? If so, please advise defrost instructions in time for serving.

Hello,

Yes, you can. Cool completely and open-freeze to prevent damage, until solid. Wrap in foil or a polythene freezer bag with cardboard support to prevent damage, or a rigid container, for up to 2 months. Defrost overnight in the fridge. Decorate and serve.
