This recipe is from The Delia Collection: Chocolate.
This is a subject that experts get awfully fussed about and there are all kinds of rules and regulations about handling chocolate.
Therefore what I have on offer here are the easiest home-made truffles in the world. They will make an extra-special gift for someone who is happy to consume them within three days and they make an equally special ending to any special meal – served with liqueurs and coffee.

I'm so sorry to bother you at this time of year, Lindsey, when you're so busy. I made the chocolate truffles yesterday with the aim of finishing them today. I know this is my fault and I should have told husband not to eat the remaining chocolate to coat the truffles, but he did. So will the mixture be ok on the fridge until next week or best to freeze them, take them out of the freezer and replace after I coat them, or freeze them then coat them at Christmas when defrosted? I'll try not to bother you again before Christmas and hope you and the team have a wonderful Christmas and a happy and peaceful 2017. Love Wendy xx
Answered by Lindsey: Hi Wendy, It’s no bother. I would keep them in the fridge than coat them when you’ve got the chocolate (preferably earlier in the week) and then freeze them. Then take them out of the freezer, as you need them. We wish you and your family a wonderful Christmas and a very happy new year too. Lots of love Lindsey x
