I use three sizes: 8 x 12 inch (20 x 30 cm), 10 x 14 inch (25.5 x 35 cm) and 11 x 16 inch (28 x 40 cm). Roasting tins come in a host of different sizes, but the key, when roasting meat in them, is that they mustn't be too deep - otherwise the meat will just steam.
